FSIS Begins Hazard Analysis Verification Roll Out

USDA’s Food Safety and Inspection Service (FSIS) has published Directive 5000.6 Performance of the Hazard Analysis Verification (HAV) Task. The directive provides instructions that set out a methodology that inspection personnel are to follow in verifying that a plant’s Hazard Analysis and Critical Control Point plan is based on consideration of the hazards that are relevant to products the plant produces.

FSIS will initially roll out HAV in a small number of ground poultry plants beginning in October. Based on results of the initial roll-out, the Agency will extend the use of the HAV by its inspection personnel to all meat and poultry plants. Plants will not be subject to any new requirements or regulations as a result of this action.
